Les merSourced from the Dominican Republic, a renowned producer of Trinitario cocoa, these beans come from our partner Conacado. This cooperative represents 10,000 small-scale cocoa farmers dedicated to producing high-quality, well-fermented organic and Fairtrade cocoa. They manage extensive facilities across seven regions for controlled fermentation and drying of the cocoa. This chocolate is more than a delicious treat; it's a commitment to the environment. The organic cocoa farming improves soil health and water retention, and the planting of shade trees on the plantations supports local wildlife, like birds and insects. By choosing this chocolate, you enjoy a superb taste while contributing to sustainable farming and biodiversity.
Les merFounded in 2019 by Jacob, Mellōw chocolate is a Copenhagen-based chocolate brand rooted in ethical and sustainable practices. Born from a suitcase of cocoa beans from Panama, Mellōw has evolved from initial experiments in Jacob's kitchen to a dedicated production facility. Their chocolate, made in small batches, prioritizes human rights, biodiversity, and sustainable cocoa farming. Mellōw chocolate is committed to slave-free and child labor-free chocolate, supporting cocoa agroforestry to combat deforestation. They blend science and art to craft chocolates that retain the natural benefits of cocoa beans, using natural and unrefined ingredients to preserve antioxidants, vitamins, and minerals. Jacob's vision for Mellōwis simple yet profound: to produce the finest quality chocolate with just two ingredients - ethically sourced cocoa beans and unrefined sugar. Mellōw's approach encompasses sustainable practices, ethical partnerships with farmers, organic ingredients, and plastic-free packaging. Focused on preserving the nutritional qualities of hand-picked cocoa beans, Mellōw chocolate develops its processes scientifically. They aim to inspire with well-designed products, collaborating with local creatives, all while striving to raise the bar in the chocolate industry.
Les merFeitoria do Cacao was born from a transformative journey to São Tomé and Principe by founders Tomoko Suga and Sue Tavares. During their visit, they explored cocoa plantations and met with farmers, learning about the cocoa process and the stark contrast between the farmers' lives and the sweetness of chocolate. This experience deeply impacted them, driving their commitment to bridging the economic gap between cocoa farmers and chocolate producers. After a year of professional chocolatier training and meticulous experimentation with cocoa from various countries, they developed a product that highlights the unique character of each terroir. They focus on micro-batch, bean-to-bar chocolate making, ensuring attention to every detail. Feitoria do Cacao stands out as a pioneer in the Portuguese market, offering a unique product and committing to paying fair prices for high-quality cocoa. Their vision extends beyond chocolate as a simple treat. In Portugal, they aim to redefine chocolate as a divine nourishment suitable for all ages. Since 2017, Feitoria do Cacao's chocolates have gained international acclaim, earning prestigious awards in the sector.
Les merFrinsa Estate In 2010, Wildan Mustofa and his wife Atieq Mustikaningtyas started the coffee project that would become their Java Frinsa Estate. With an extraordinary focus on quality, Wildan Mustofa has managed to make his farm stand out. He is truly one of the key figures in Indonesia's specialty coffee wave. While most coffee in Indonesia is processed with the traditional wet-hulled method, they use mostly fully washed processing at Frinsa Estate, resulting in a much sweeter, cleaner, and more transparent flavor profile. Notably, Frinsa Estate is one of the few farms in Indonesia focusing on selling single-variety coffees. They also lead the way with their experiments with modern processing methods, such as using bacteria like lactobacillus or different types of yeast in the fermentation process. CleverCoffee paid 213% over the market price for this coffee.
Les merChallenging expectations Indonesian coffees are part of a very different section of the coffee industry. 75% of the country's production is of the Coffea Canephora species, also known as Robusta (i.e., not C. Arabica), which generally produces lower-quality coffees. Most of the coffee is used in manufactured products like instant or canned coffee. Indonesian coffee doesn't have the best reputation in the specialty coffee industry. They are generally known for their earthy and impure flavors, but are all Indonesian coffees really like that? With this coffee, we wanted to highlight a super clean and delicious coffee from West Java - and challenge all expectations of what Indonesian coffee tastes like.
